I prefer the 1st one, but I think you should more inlay (err, I'm not sure this is the right word Dx) the text.

I prefer the first one. The um brown ruins I think looked like giant poop in the preview(and more like ruins/dirt stains in the full view). And they don't really seem to fit in with the picture, like they were put in there as an afterthought and weren't actually part of the image in the first place. I really like it with just the snow, its got a more serene feeling to it.

Mother's great for advice on life, not so great with art LOL. If you really want to balance out the image I'd put a Christmas pine on the opposite side of the card from the rider and horse. It'll tell a more Christmasy story and not make one side feel heavier then the other.
